Summer on the Hill: An El Pedregal Resident's Guide to This Season's Openings, Reservations, and Rituals

Ask a first-time visitor when to come to Cabo and they'll parrot back May and June, then avoid July through September because of the heat and the storms. Ask someone who owns a home behind the tunnel and you'll get a different answer. Summer is when El Pedregal quiets down, when a Saturday table at El Farallón stops requiring a two-month lead, when the new restaurant at the top of the hill actually has room for walk-ins, and when the calendar down at the marina belongs more to residents than to charter guests. This is a season for people who already live here.

The one thing that actually changed on the hill this year

If you have been away since spring, the headline is Fénix. It sits inside The Mountain Club, the private social and wellness club near the crest of Pedregal, and it opened recently enough that construction was still finishing when the first guests arrived. Chef César Pita, raised in his grandparents' restaurant in Querétaro and now what he calls a "Choyero adoptivo," runs a contemporary Mexican kitchen built around wood-fired grills, brick ovens, and Baja ingredients. The signature dishes lean coastal and smoky: grilled fish with clams in a chorizo sofrito, birria chilaquiles, huitlacoche tortellini, mole verde with handmade tortillas.

What matters for a resident is the schedule, because Fénix is unusually accessible for a place this new:

• Breakfast Tuesday through Saturday, 8:00 a.m. to 1:00 p.m.
• Sunday brunch, 9:00 a.m. to 2:00 p.m.
• Lunch Tuesday through Sunday, 1:00 p.m. to 4:45 p.m.
• Dinner Tuesday through Sunday, 4:00 p.m. to 9:45 p.m.
• Closed Mondays

The address is Camino de la Barranca Mz 38 Lote 16, which puts it high enough that the sunset table is doing real work. Reservations by phone at +52 (624) 192-7217. The Waldorf, quietly

The Waldorf Astoria Los Cabos Pedregal picked up its next round of recognition this summer, landing at number one in Cabo San Lucas, number two across Los Cabos, and number five in Mexico in the Travel + Leisure 2026 World's Best Awards. For a resident that has two practical implications. The first is that the property's four restaurants are going to stay hard to book from December through Easter. The second is that right now, they are not.

El Farallón is still Chef Yvan Mucharraz's sea-to-table room carved into the cliffs, where guests select their own fish from the display before it goes to the open-air kitchen. If you have Canadian relatives arriving in late July, this is the reservation to lock in now while it can still be had at the hour you actually want it. Mar y Leña, the steakhouse, is the room to send friends to when you don't feel like hosting. Luna y Mar Spa is the underused resident amenity of the property. Book it on a weekday morning in August when the resort's day-guest traffic drops.

One caveat that applies specifically to summer at the Waldorf and to a lot of the west-facing homes in Pedregal: the mountain that gives the resort its shelter also puts it in shade in late afternoon during the summer months, when the sun tracks farther north. If you are entertaining on a west-facing terrace in July, plan the pour for a little earlier than you would in February.

The tunnel calendar, translated for residents

The events everyone puts on a Cabo travel blog are the same six or seven happenings that draw visitors. What follows is the resident's version: which ones are worth walking through the tunnel for, and which are best watched from a distance.

If you have never gone down to a Bisbee's weigh-in, this is the year. It is a five-minute walk from the tunnel exit and it functions as the unofficial end of Pedregal's off-season.

About the beach, and about July

Pedregal Beach, or Pedregal Playa, is a private stretch reserved for residents, and the answer to whether you can swim there has not changed: the surf is too heavy, and it is a walking beach, a sunset beach, a beach for the dog. New arrivals get this wrong every summer. If a houseguest wants to actually get in the water, the swimmable options are outside the neighborhood, and the drive to Chileno or Santa María is a fair trade for a morning.

The other summer honesty is the weather itself. July through September is when Los Cabos runs hot, humid, and prone to storms. That is precisely why the reservations open up and the hill goes quiet. It is also why residents plan mornings early. A 7:00 a.m. yoga session on a terrace, a walk down to the beach before nine, breakfast at Fénix by ten, and the rest of the day indoors is a defensible rhythm from mid-July through early September.

A day when guests come

Because the question is going to come up:

Morning. Coffee at home, then breakfast at Fénix around 9:00 a.m. before the room fills. Ask for the plantain tortillas.

Late morning. A walk on Pedregal Beach with guests. If they want to swim, drive them to Playa el Chileno for an hour.

Afternoon. Luna y Mar Spa treatments at the Waldorf, or a swim in a house pool during the shaded hours. If it's a Bisbee's week, walk down the tunnel around 4:00 p.m. for the weigh-in.

Evening. Sunset at El Farallón on a Friday or Saturday, when the room is open. On a Tuesday or Wednesday, Fénix at 7:30 p.m. is the easier reservation and the shorter drive.

That is a day that does not exist on any Cabo travel blog because it is not a visitor's day. It is a resident's day, and the reason to write it down is that most of the pieces are new enough this year that even residents have not tried them in sequence.

What summer is really for

The version of El Pedregal that gets photographed is the December-through-Easter version: full driveways, hard reservations, the marina packed with charters. That is not the version of the neighborhood most of us moved here for. Summer is the version. The hill is quieter, the new places on it have room to actually cook for you, the Waldorf staff has time to remember your name again, and the calendar down the tunnel arranges itself around residents instead of the other way around.
